Beef & Fish
Appetizer: Pineapple – Coconut Chicken has a variety of flavors. Fresh tenderized boneless chicken breast, sautéed in butter, then flour added to create a Roux, to thicken the dish and deglazed with White wine and chicken stock. Then adding fresh chunks of Pineapple, cooking slowly, and then adding fresh coconut, salt and pepper, and a hint of cream.
Salad: Fresh mixed greens with tomato, cucumber, craisins, Almonds, and Danish Bleu cheese crumbles.
Complimented with a fresh Honey/Lime/Basil vinaigrette. Can also be served with two traditional dressings, Ranch and Italian.
Starch: A combination of Wild and Long Grain Rice. Seasoned with herbs and spices, and a little white wine. Cooked to perfection.
Entrée: Beef tenderloin medallions, gently cooked and topped with a Mushroom and Burgundy wine sauce, served alongside Wild caught Salmon, flavored with, lemon, lime, orange, and white wine. Garnished with slices of fresh, orange, lime, and lemon.
Fresh Bread: Fresh baked local artisan breads with butter.
Dessert: Fresh baked onsite, Turtle Cheesecake. Combing Chocolate, Caramel and Pecans. Smothering the creamy cheesecake.

Chicken Breast Stuffed with crab
Appetizer: Blackened Orange Roughy, with an Apricot ginger sauce.
Salad: Fresh greens, tomato, cucumber, Danish bleu cheese crumbles, Cinnamon roasted Pecans, finished with Cognac. Served with Ranch, Italian, and Fresh Mango vinaigrette.
Vegetable: Fresh Asparagus. Lightly steamed and drizzled with a wine and citrus glaze.
Starch: Oven roasted Yukon Gold potatoes, with butter, Rosemary, and Parsley.
Entrée: Chicken breast, stuffed with Crab. Topped with an Alfredo cream sauce.
Dessert: Crème Brule

Blackened seared tuna
Appetizer: Mini Crab Cakes
Salad: Fresh mixed greens, tomato, cucumber, Crasins, Danish bleu cheese crumbles, Cinnamon roasted Pecans, finished in a Cognac reduction. Served with a fresh made at the moment Peach vinaigrette.
Vegetable: A fresh medley of vegetables. Seasoned and complimented with herbs, Port Wine, Walnuts, Apples, and Asiago Cheese.
Starch: Baked potatoes, butter, and sour cream.
Entrée: Blackened seared Sushi grade tuna. Served with an Apricot Ginger Chutney.
Breads: Fresh sliced loaf breads and butter.
Dessert: Chocolate cake with Peanut Butter Icing

Pork w/Chutney
Appetizer: Fresh Shrimp grilled to perfection and flavored with Teriyaki Sauce.
Salad: Fresh mixed greens, tomato, cucumber, Fresh Apple, Walnuts, Danish Bleu cheese crumbles. Served with fresh Raspberry Vinaigrette. Can also so offer traditional Ranch and Italian.
Vegetable: Fresh Yellow squash and green zucchini Lightly grilled and seasoned with olive oil and fresh herbs.
Starch: Grilled Sweet Potatoes. Served with Brown sugar, cinnamon and butter.
Entrée: Fresh pork Loin, slow roasted to perfection. Served with a Mango Chutney.
Bread: Fresh local artisan bread with butter.
Dessert: Fresh berries and assorted fruit, sautéed and finished with an Apricot Brandy Sauce, served over Pound Cake.

Black Angus filet & Crab Cake
Appetizer: Shrimp Diane, large shrimp, sautéed with butter, garlic, scallions, mushrooms, chicken stock, white wine, green chilies, basil, oregano, thyme. Finished with a touch of cream, or Blackened Sushi grade Tuna, served with an Apricot/Mango ginger chutney.
Salad: Fresh mixed greens, tomato, cucumber, Crasins, Danish bleu cheese crumbles, Cinnamon roasted Pecans, finished in a Cognac reduction. Served with a fresh made at the moment Peach vinaigrette.
Entrée: 6 oz Black Angus filet. Complimented with a Red wine demi-glaze.
Coupled with a 3 oz Jumbo lump crab cake.
Accompaniments: Yukon Gold Garlic smashed Potatoes, and a vegetable medley marinated in a fresh, Honey/Lime/Basil marinade.
Fresh loaf breads sliced and served with butter.
Dessert: Banana’s Foster Flambé over ice cream

Appetizer: Italian herbed roasted root vegetables. Served on the side a Red wine reduction.
Salad: Romaine salad, mushrooms, bell peppers, olives, cucumber, tomato. Served with Chefs homemade Italian vinaigrette.
Entrée and vegetables: Chefs 5 cheese Lasagna, Sweet and Hot Italian sausage with peppers and onions. Complimented with a wine infused Marinara sauce.

Grilled Reuben sandwiches, made with traditional Corned beef, or deli style turkey breast. Combined with Sauer kraut, swiss cheese, thousand island dressing, seasoned with additional Caraway seeds, in between to slices of grilled Rye bread.
Served with, a fresh vegetable medley marinated in Honey/Lime/Basil vinaigrette. Yukon Gold potato salad, assorted brownies, chips, and pickles. Iced Tea and Lemonade.
